When you log it in your diary, either enter as raw eggplant or cooked eggplant. It's up to you Edited to mention that using a 'cooked eggplant' may differ to your prep/cooking techniques etc. Perhaps if you make nuggets frequently, you could do up your own recipe. I often do my own recipes but I don't add it to the database
