I usually have left overs too- I think as long as you eat over 1200 a day the rest are just a bonus.

See a physical therapist- I had an injury last November and she recommended Kinesio Tape to stabalize the knee. She also got me back to running in only couple of months. In the meantime swimming and low resistance on the bike. Good Luck!
