Roasted veggies. Pick up fresh veggies you like; brush LIGHTLY with a big of olive oil. Sprinkle with salt/pepper if you like them. Roast in oven (425 degrees) for 30 minutes. YUMMY!

My conference is next week. :# So far here is my plan* Walk to the conference (1 city block one way and back each day) * Pack a few 'good' snacks - pretzels, dried fruit, dry cereal * Look for healthy options at each meal! * Watch my portions * Utilize the hotel work out room Wish me luck!

I figure I will toss in a few snacks, but I'm currently able to grab something constantly if needed that is healthy. Portion control is a must! Yep, I will have at least one night out too. Thanks for the input!

3 days with 1 day of traveling. Just wanted to report back that this was a HIT with the family! My 7 year old had it in a tortilla (like a burrito) with cheese and sour cream added for him. Plus rice on the side. Exactly what Need2Exerc1se said! I do mine 'easy' with basically just adding in veggies to scrambled eggs. My youngest loves broccoli. I like it with sauteed bits of yellow squash, zucchini and bell pepper. Almost any veggies will do! Great to use up leftovers for a quick meal.
