Ok, but then what's the point of seeing a dietitian? Individualized planning and education, I'd say. It sounds like there were a lot of gaps here. "Focusing on protein" does limit other nutrients, but doesn't provide guidance on how much to spend on fat vs. carbs (and I thought carb counting did matter for diabetics… ).

It's always good to add more veggies and fruits, especially if you aren't really eating any, but if you don't like kale, there are other things you can try. Baby spinach is much milder (and softer), for example. What difference could you tell?

It confuses me that your doctor said that, because the whole problem is that the skin is overstretched, and that happens on the way up. And as you continue lose, your skin needs to continue retracting until you hit goal weight (and after) - and that process is much slower than weight loss.
