If you want the scale to move down, I'd ramp up the cardio. Hit it hard for those three days, not just one. You could also make your strength program more of a circuit program, maybe wear a filled/partially filled backpack if your body has a adapted to what you're doing. I can only wish I had your stats! That said--I'd try real hard to cut back on the carbs. My body doesn't do well with them, too much sugar is the same for me. Give it a try for a week, see how you feel. I don't cut all carbs, but I do watch the refined ones carefully.

That sounds like an awful lot to do during a holiday! I'd drop the shred, wear the HRM during the climbs and hikes-- then see how you feel in the evening. You might have the energy for a short run. Just my opinion though : )

I have a real hard time eating my exercise cals back also. An easy way to add would be a palm full of raw almonds. Good for you and ups the protein you need at snack time. Another way to add in some calories and carbs you need would be a better cereal. I love special K and smart start.
