  • I am going to make a sweet potato brulee for dessert this holiday season. Skinnytaste has a recipe and I am going to omit the brown sugar on top. I think sweet potatoes are plenty sweet on their own. It should be a relatively guilt-free dessert. =)
  • Friend request headed your way. =)
  • I am also a southern girl I'll send a friend request your way. Best of luck.
  • A friend request has been sent your way. =)
  • I suppose this is a salad, but not a traditional one so I'll throw the idea out there: Mix quinoa with some fruits or veggies for a quick quinoa salad that will last for days in the fridge. Serve in an avocado half for a quick lunch.
  • Yes! Count me in. I love to cook and try new kitchen experiments. =)
  • I love veggies of all sorts, but to make my rice healthier and go a little further, I always put some raw spinach into the food processor and stir that into the rice. Yeah, it makes it green, but you can't taste it at all- especially if you top the rice with black beans and some salsa.
  • When I cut sugar I typically cut added sugars. Ex: Using plain oatmeal instead of flavored from the packet, plain milk in my coffee instead of flavored creamers. I maintain awareness of the sugars in fruit, but I don't sweat it too much. Any particular goal you have in cutting your amount of sugar?
  • First, congratulations on your baby! For cheap but healthy meal ideas, when the budget gets tight I cook up some black beans and rice. I usually make mine with 1/2 cup bean, 1/2 cup brown rice, and a TON of veggies (tomatillos, onions, bell peppers, broccoli, tomatoes, whatever you have on hand). Add some cayenne, garlic…
  • What's your daily calorie goal? Could you open your diary so we could see what you are eating?
  • Some common side dishes I enjoy are sweet potatoes, roasted chickpeas, black beans with pico de gallo, fruit, and roasted vegetables. Roasting the veggies or grilling them with a little seasoning really makes boring steamed veggies into something yummy!
