I sautee 2 cloves of garlic with a little olive oil, then mix a can of black beans (drained and rinsed) with corn (drained) until warm. I then add diced tomato, chopped onion, guacamole, and a little salt and pepper. I eat it just as so, or in a tortilla, or use it as a dip with tortilla chips.

When your body is not used to alot of fiber you do tend to have gas once you add it. You should increase your fiber intake gradually in order for your body to get used to the added fiber in your diet.
