I'm close to your % - 25% calories for carbs, 45% fat and 30% protein most days. These amounts work best for me.

Calories count but when you have insulin sensitivity, keeping carbs low in my diet helps with not wanting more and more carbs.

Easy Eggplant Pizza - Here's my recipe. One large eggplant sliced lengthwise in 1/2" slices. Salt both sides and let drain for about one hour.
