One more thing, those two pounds you say you gained were more than likely not from the sugar. THat's probably water or other metabolic processes. You can fluctuate 2-4 lbs/day. Weigh-in only once a week or once a month.

Any kind of marinade will make it juicy. If you want it dry, I would probably season with a little kosher salt and some lemon pepper or cracked pepper. It may not be as juicy.
