I'm not sure what to tell you. They'll never be exactly like pasta noodles-- 'cause they're made from a vegetable rather than a grain-- but you should be able to get them reasonably close. I suspect that either: 1) You're more sensitive to textures than many other shirataki eaters, or 2) Perhaps the brand or noodle style…

You can use both kinds interchangeably (I do). I buy whichever is cheaper. When they're bone dry on the outside they're still moist on the inside. So fear not! -Chelle

Since even pasta rigatoni is chewy I can only imagine how chewy shirataki rigatoni would be...! That said, my favorite noodles are actually the fettuccine tofu shirataki noodles-- and they're a little chewier, too, so go figure... -Chelle

Well you'd have to rule out cabbage, celery, bean sprouts, bok choy, etc...! My philosophy is that I use filler foods to provide bulk so that I can eat higher calorie, nutritionally dense foods WITH them. When I'm in Hilton Head I buy them at Harris Teeter, too. They're high as a kite on just about everything else but they're very reasonable on tofu shirataki noodles and bean sprouts-- two things that I eat a lot of. Glad you found them! -Chelle

The difference in texture isn't terribly different between the tofu and non-tofu. I switch back and forth between them depending on what the best price is. (Currently I'm getting 8oz of tofu shirataki for $1.35/bag at our Asian market.) Try dry-frying them a little longer. If you're still not absolutely satisfied, try…

I eat them many ways-- including with red sauce. When I use red sauce I find that it tastes best if I: 1) dry fry the noodles, as described in the post, then 2) add the sauce to the pan and continue to fry (like you'd do with leftover spaghetti). I love fried leftover spaghetti-- especially when it's low-cal shirataki...!

The smell quickly rinses away-- and it's only about 1/10th of what a can of tuna fish smells like when you open it. I love fish so I don't find it to be the least bit offensive. Fear not! Just be sure to dry fry them. -Chelle

First of all, I've lost almost another 20 pounds since this post and photo...! As for the shirataki noodles-- I eat them every single day-- sometimes twice per day-- and I've never had even the slightest problem. They have been my salvation! -Chelle

I've done this before-- they taste wonderful! Remember that they're vegetable based, so it's really not much different than slow cooking the carrots and onions. -Chelle

They are absolutely gluten free! Edit: I meant to say that the non-tofu shirataki noodles are definitely gluten free. I don't know about the tofu ones. I have friends with Celiacs who eat them! -C

If you read my post you'll see that shirataki noodles do NOT have tofu in them. If you happen to buy "TOFU shirataki noodles" you should expect to find some tofu in them, but shirataki noodles do not contain tofu.
