I love it! I suspect that stir frying the noodles, as you do, accomplishes pretty much the same thing as my dry fry method-- so you may not notice a huge difference. Shirataki noodles can come with or without tofu blended in. If you've had a bad experience with tofu I would suggest buying shirataki noodles rather than tofu-shirataki noodles. -Chelle

There's no smell once you rinse them in hot water. And once you dry fry them they even have a nice texture. You're cheating yourself if you don't try these noodles after preparing them properly. Excellent post! I find that if I am full-- really full-- at least once per day then I can do a great job of staying on my calorie budget. I have about 30 different ways that I make shirataki noodles, so I keep things pretty well mixed up. I always say, "Hungry people make lousy dieters." -Chelle

Shirataki noodles are made from a Japanese yam instead of flour. They come packed in water and need to be rinsed with hot water to get rid of the slightly fishy smell. After that you just dry-fry them on high with cooking spray and they taste (and smell) wonderful!

I just remembered that in the Philippines (where it's called "singkamas") they served it with shrimp paste (bagoong), which was also yummy (although very high in sodium). I've got some bagoong in the 'fridge, so I think I'm going to use it on my next jicama.

Even though they LOOK like potatoes, they're a legume. They are considered a non-starchy vegetable and have a glycemic index of near zero. They have so many health benefits you really need to Google them. It's mind boggling. -Chelle

I'm not exactly sure why. They called these "Hobo Dinners" in Girl Scouts. It refers to the cooking technique. Since most hobos don't carry around pots and pans with them they cook in foil or cans or whatever is available.
