You'd have to eat 7000 extra calories to gain 2lbs of fat. From what you've said, you definitely didn't do that. It's probably water retention. Just stick to your plan and don't get discouraged!

Count everything individually? Fried chicken seems like it would be higher in fat than what you did.

I started running with C25K about a year and a half ago. Since, I've done two half marathons. I have never been as sore as I was the first week of C25K. I'd try to do a run a week on the beach. If that's where the race will be why not train there?
