  • I told myself I would walk two miles and then did a third. Also at lunch my grandmother offered to get me ice cream and I turned it down since I really was full. Yay!
  • Lots of veggies, or if you need some protein, some chickpeas. Goat cheese crumbles also add a lot of tang and flavor.
  • Not the healthiest, but I love a sprinkle of Lawry's Seasoned Salt on steamed or roasted veggies. Also, for raw veggies, a little bit of hummus or even the Boursin light cheese-- both spreads are rich and creamy and only 25 calories/tablespoon.
  • I have a tight morning schedule, so on Sunday nights, I make a low cal artichoke feta quiche (comes in at 240 cal for 1/6 of quiche) and then I warm up a slice every morning and enjoy my cup of coffee. It takes the "thinking" out of breakfast and is delicious. Found the recipe in my "Cook This, Not That" cookbook.

  • I like to make a little quesadilla... I use the small corn tortillas with a wedge of the laughing cow chipotle cheese, some pico de gallo, and a 1/4 cup lowfat mexican cheese. All in all, it totals about 210 calories and its delicious! I make one when I can't bring leftovers.
  • Zucchini fritters are delicious! Grate the zucchini and add some basil, garlic, salt and pepper with an egg and a cup of flour. Combine and fry in a few tablesppons of EVOO. They are great :)
