I think a variety of things could factor into this. Water weight loss after a workout via sweating and the like. Also, as gross as it is, bowel movements can effect your weight, especially if you're weighing after one.

Almonds here, too. I tend to have texture issues with a lot of nuts, but I don't with almonds. Plus, they're more filling to me than, say... peanuts or macadamia nuts.

It could be asthma related. But if you're feeling fluid in your lungs you should definately see a doctor. That almost sounds like it could be turning into pneumonia.

I don't know about calories, but I know that RED wine is better for your heart and blood pressure. I imagine caloric intake would vary between the brands and types.

That's actually a really good question. I know that a lot of doctors will recommend a change in diet to help manage different psychological issues, so I can imagine that certain foods are probably more prone to stress you out and vice versa. I'm curious to see what some of the long time MFPers will say about this.
