Actually, a yearling calf is not fat. The 300% weight gain is due to 'growing upwards" and not 'sideways' (to borrow your terms), so it is really quite comparable. A market steer is usually about two years old - you have to feed them the second year to get 'sideways' growth. But, we digress.

Agreed. And I am not saying we 'need' dairy. Obviously, if you are lactose intolerant or dairy allergic, you should avoid it. But, if you do tolerate it, it can be a useful part of your diet, eaten appropriately.

Gels are best taken with lots of water. Otherwise, they are a bellybomb for me. Like Rybo said, experiment during your long training runs to see what works for you, and stick with something tried and true for race day.

I'm not talking about Celiac's, I'm talking about people (like me) who are non -celiac but gluten-reactive. When I am not on a GF diet, I can eat a slice of bread without having a particular 'reaction'. When I have been strict about being GF, and I get some accidental gluten, at a restaurant for example, I really notice it.

You may find, after swiching to GF, when you get incidental / accidental gluten, you have a much more noticable reaction than when you were eating it all the time. Being without it may increase your sensitivity.

My favorite shorts for my long runs are made by Nike - sorry, don't know the name - but they are 6-9 inch inseam and semi-loose fit (for all those modesty issues), but they have a compression spandex) liner, so they don't chafe. Don't even need my bodyglide

You cook it just like rice (2 parts water, one part rice / quinoa, so they could be pretty much interchangable. I cook mine in chicken stock all the time. Inca Red has a lot more flavor than white quinoa. I use Ancient harvest brand - doesn't need to be pre-washed.
