  • Overnight oats are a great time saver in the morning. If it doesn't seem filling enough, add lots of extra fruit- that's what made it work for me.
  • Agreed, just measure it dry, then divide into portions once it's cooked. I wouldn't keep quinoa in the refrigerator more than a week, but you can freeze it if you like to have it on hand.
  • I love it in omelettes with turkey sausage, mushrooms, and spinach.
  • Wilt a ton of spinach, mix with salsa, a carmelized onion, and whatever chopped up leftover veggies you've got in the fridge. Put half of that mixture in a baking dish, then layer on the tilapia (frozen is fine), then the other half of the veggie mixture, then top with feta (as much as you can possibly fit in your calories…
  • Wilt a whole bunch of spinach (or cook up some other veggies you like better) and mix with salsa. Put half of the mixture in a baking dish, add the fish, then the other half of the veggies. Sprinkle however much feta you can fit in your calories over the whole thing. Bake at 425 for half an hour or so.

  • As others have said, many slow cookers have timers or "keep warm" settings so your food won't actually be cooking all day. A favorite I'm making later this week is to throw in chicken (bone-in gives the best flavor), cubed sweet potatoes, onion, and mushroom, then cover with white wine (cut with water or broth to lower the…
  • This recipe for cauliflower roasted with Sriracha is one of my favorites: http://www.veganricha.com/2014/01/quinoa-cauliflower-collard-bowl-with.html
  • This. Or with ground turkey, carmelized onions, and salsa. Or with shredded carrots, roasted cauliflower and peanut sauce.
  • I throw them in the slow cooker with salt, pepper, and garlic. When they're done I shred them and add to salads, tacos, noodles... whatever really.
  • It's helped me to trade the after work beer for a club soda with lime. It's something fizzy and refreshing, but light. On the weekends I still treat myself to good beer, but after a couple rounds (when taste becomes less important anyway) I switch to vodka soda.
  • I'm here too, in Incheon. It can definitely make calorie counting hard with all the different foods and brands that aren't in the database. Going back to the States looking great is definitely a nice motivator though!
  • My go-to meal when things are tight is usually an omelet. Eggs are cheap and easy to cook, and you can use whatever vegetables are on sale. A few other things to keep in mind: You can save money on chicken if you buy it in parts, rather than boneless and skinless, and just trim the skin off yourself. I've found that I can…
  • I make a lazy version of tzatziki sauce to eat with meat, pasta, veggies... anything really. Just stick a chopped up cucumber, a clove of garlic and a pinch of salt in the blender with a little bit of plain yogurt and whatever spices you want (I usually go with a dash of cumin). It's not as creamy as the real stuff, but…
