Can't really speak much on the 1% part but as for the 31 cal/lb of fat, Lyle McDonald has said that he does not feel that it is relevant to dieting in an optimal manner. I see nothing wrong with it. I drink about 3 cups per day and often include other dairy in my diet as well.

I don't try to convince anybody because I don't care what other people think about calories or dieting. It doesn't affect me at all so I don't spend time or energy on it. Life is much easier when you stop caring about stuff that has no effect on you.

One half to one pound per week is a good goal for you. Two pounds is really for people who are heavily overweight/obese. You are *just* outside of the healthy weight zone so your goal needs to be more conservative.
