I want to improve my distance during my usual gym trip to do 6 miles a day. Right now I'm around 5.75-5.9, so I think I can manage it! And if I could get down to 160, reliably, that would be great... I seem to keep fluctuating between 169-164.

For my cardio, it's when the clock finally runs out on the elliptical and I keep going for a bit because of the momentum and even though I'm tired and panting I can't quite stop.

Yes, you should stop. Even when the words are clear, sometimes the thought just doesn't get through and in all honesty actions speak louder than words- so saying you aren't looking for anything serious but then spending time with him, with your friends, and having fun with him, sends a complicated message. Just don't do it.
