Smoky Corn Salad
Spray large skillet, saute 4 cups fresh or frozen corn until lightly browned. Transfer to serving bowl. Stir in 2 tablespoons lime juice and 1/4 teaspoon ground chipotle pepper. Cool for 5 minutes then stir in 2 chopped sweet red, yellow or orange peppers and some chopped cilantro. YUMMO! 3/4 cup = 105 calories
