Bone Marrow
Today, for lunch, I have a lamb shoulder chop. It had a nice big 2cm x 2cm chunk of bone marrow in it. Why can't my whole chop just be seared bone marrow!?!?! I couldn't help myself and ate it right away. Now, I have nothing to look forward to. Sure, some of the fatty edge pieces are nice, but they just don't compare.
