Echoing the suggestions for trying cold brew. The high temp of standard brewing is what brings out the bitterness. Also fresh grinding the beans helps.1 -

I notice that my fat gets lumpy when I'm losing. I read once that fat gets like this before a "whoosh" but I have no science to back that up.4
