Does anyone have a good tried and tested egg nog recipe? I was googling, and think I will try this one with stevia instead of sucralose https://www.atkins.ca/recipes/old-fashioned-eggnog/1596 but I was curious if anyone had a really good sugar free egg nog recipe they could share?

I like this one, but you do absolutely need a candy thermometer... http://alldayidreamaboutfood.com/2010/12/almond-milk-eggnog-and-a-holiday-shortbread-giveaway.html

We made the Ruled.me recipe and it was AWESOME but you do need to let it sit at least 24 hours before it tastes "right"

That one does look good but I glossed over it because of a tree nut allergy in the house... I bet I could use coconut milk instead of alond milk though. Hmmm.

I'll check it out. I'm willing to wait a day or so for perfection. ;)

    Thanks all. :)

I found one on reddit called "ghetto keto eggnog" that is very good, at least to my taste... I make it with liquid sucralose because I can't stand stevia. I also used rum but only 1/4c per half gallon recipe (I typically avoid alcohol because of extremely unpleasant symptoms from even 1 drink but I wanted the flavor without the corn syrup of imitation extract - it turned out great for me)

Original post link and copied text below:
    https://m.reddit.com/r/ketorecipes/comments/1tbgp9/tis_the_season_ghetto_keto_eggnog/

1 quart Unsweetened Almond Milk (vanilla flavored)
    1 pint heavy whipping cream
1 16 oz carton of liquid eggs (I used the Kroger brand Break-Free product)
1/2 cup Splenda (I counted the carbs in this. You could use a liquid sweetener to lower carbs further)
1/2 cup brandy, rum, or bourbon (I went with brandy)
    Nutmeg to taste
    Vanilla Extract to taste

Take all the ingredients, get a funnel, and add to an empty 2 liter bottle. It will fill it nicely.
Cap it, and shake it like crazy. Serve chilled.

I've made it with coconut milk as well as with Fairlife. I prefer the texture of almond milk, but the taste with coconut milk was delicious too.

I'm going to try this one sometime during the week: http://cavemanketo.com/keto-whipped-eggnog/
I'll use Swerve for the sweetener.

Or this one, with almond milk instead of coconut: http://www.ruled.me/creamy-keto-eggnog/

We Puerto Ricans make and consume coquito during the holidays. It just occurred to me that I can probably make this low carb friendly pretty easily, as it's basically coconut egg nog. *goes to Google to search "keto coquito"....*

This is the best I could find in my few minutes of searching.

I have not calculated the carb count, though, and nutrition info isn't listed on the site.

Here's another one. Weird how they list calories and fat but not carbs, though.... and if I'm not mistaken, cream of coconut is very sweet.

I have never heard of Coquito but then again, we don't have a strong Puerto Rican population in western prairie provinces of Canada. It looks like quite a treat though... My SIL would love it. Maybe I'll try it this weekend.

    Is coconut crystals coconut sugar?

Cream of coconut is a nasty sugar chemical concoction, but to use real full fat unfiltered coconut milk...mmm I gotta get a can of that and give this a try! I'll probably use a mix of stevia and xylitol in place of the coconut sugar.

I used this one for drinking last year -- http://www.intoxicatedonlife.com/2012/12/21/low-carb-eggnog/

And this one in a dairy free eggnog bread pudding, though it's fairly low carb, too -- http://www.marksdailyapple.com/primal-eggnog

That's what I was thinking. I had to look up coconut crystals, but now that I know what they are I was thinking stevia should work just fine. :)

And yes, I agree cream of coconut is disgusting. Even in my high(er)-sugar days, I couldn't stand so much sweetness.

The rest in the house still drink the options out of the dairy case that show up this time of the year. I just use heavy whipping cream straight from the container. They all look the same in a clear glass. This is the 'lazy man's' way to LCHF holiday drinks. :)
