Help! I need more vegetables!

Hi there, I love the intention of this group! I need to loose 40lbs of baby weight (or really the weight I gained after my maternity leave was over) at 43yrs and I LOVE good food. I am really trying to make sustainable changes that promote health in addition to weight loss. I'd love some tried and true recipes/ideas that people like that are decent and won't make me hate life.

I did make this soup on the weekend (and I blended in 1/2 an avocado which makes it very creamy) and this was really good - I froze it and am eating it as part of lunch today :). Even hubby liked it.
