My lazy dinner used to involve ordering a pizza and eating half. (1200 calories.)
Tonight I didn't feel like cooking, so it was chicken breast dusted with parmesan cheese and potato wedges brushed with olive oil and herbs (oven @ 350 for 35 minutes with both. Cut the potatoes thin like fries so they cook through) and green beans (frozen or canned) with spicy szechuan sauce.
450ish calories and about 10 minutes worth of work to throw together. One baking dish to wash, and that's it. I'm stuffed and pretty pleased with myself, even on a "cooking slob" kind of night.

Ha ha! Wednesday night still is pizza night for me. Instead of ordering one though I do cook a thin crust frozen one. I really like the white pizzas with spinach and then I throw on some chicken breast. It definitely isn't the same as delizery or those frozen ones with stuffed crust and loads of cheese, but it's good and takes care of the pizza craving quite nicely.
Other subtle changes have been made...trading making a ground beef burger at home for ground turkey or chicken and either discarding the bun all together or eating it on a slider size bun. The trade offs have been small, but they have all added up to better eating and not feeling deprived.
Although the dinner you just made sounds yummy (except the green beans...yuck!).0
