Spinach & Egg Tacos

I'm actually making a list of my favorite egg recipes for my friend and thought I'd share what I made for dinner last night! It's high calorie but it's 3 tacos and they are VERY filling. It's an entire meal so in the end...I guess it's not that bad.

Spinach & Egg Tacos
Servings: 2
Calories Per Serving: 440-460 for 3 tacos

2 Large Eggs
2 Egg Whites (Yolk removed)
6 Slices Jenn-O Turkey Bacon
6 90 Calorie Whole Wheat Tortillas
¼ Cup Mild Salsa
1 Cup Baby Spinach, Chopped
3 tbsp ranch dressing (light or other)

On a griddle or non-stick pan begin cooking your turkey bacon WITHOUT added grease. While this cooks lightly beat your eggs and egg whites in a separate bowl. Cook bacon until crispy and remove from pan to paper towels to dry. Turn the griddle or pan down to a medium low and pour eggs, letting it sit long enough for the bottom to cook. Salt/pepper it how you enjoy and begin folding it in on itself, scrambling it as you go. Once the eggs seem mostly cooked pour the salsa over top and begin folding eggs and salsa together, don’t mind the screaming sound. Once eggs are cooked remove to a separate bowl/plate and wipe excess liquid out of pan and place tortilla in pan. Place spinach in middle and spread length wise, add enough egg of your liking on top, and one piece of bacon. Cook tortilla until lightly crispy and spread a small amount of ranch on one side. Do this for all tortillas. Enjoy!
