Black bean and sweet potato chili is one of my favorites. You can make a large batch and freeze it. I generally skip the sour cream or use yogurt.

I have been enjoying this white bean and chicken chili this week, easy to do in the slow cooker. I had some previously cooked shredded chicken in the freezer that I added after 6 hours to avoid it getting too soggy. I also added some sweet potato, and have been topping with avocado.

I tried to include a pic but it didn't work. I sautéed snow pea pods with a little garlic, onion, shrimp, and walnuts and served it over a bed of raw spinach. The whole family loved it!0
