Fully Loaded Baked Potato Soup
1 large potato (14.5oz)
2T chopped onion
1/2 tsp minced garlic
3 C fat-free chicken broth
1C light plain soy milk
1/4 C all-purpose flour
2T shredded fat-free cheddar cheese
2T fat-free sour cream
1T precook end real crumbled bacon
3/4 tsp garlic powder
3/4 tsp onion powder
1/4 tsp salt
1/8 tsp black pepper

Topping
5 tsp shredded fat-free cheddar cheese
5 tsp fat-free sour cream
5 tsp diced scallions
2 1/2 tsp precook end real crumbled bacon

Pierce potato with a fork in multiple places & then place it on a micro-wave safe plate. Microwave for 8 to 10 min. Once cool remove skin & mash.

Bring a medium pot sprayed with nonstick spray to medium-high heat on stove. Add chopped onion and garlic & cook 1 to 2 min, until onion has softened. Add broth & soy milk. Slowly add flour, continuously stirring until completely dissolved.

Added mashed potato & stir until blended. Add all other ingredients.. Mix well, reduce heat & simmer 2 min.

Top each serving with 1 tsp each cheese & scallions. Sprinkle with 1/2 tsp bacon crumble & enjoy.
