30 Vegtables in 30 Days.
Just be sure to get in any 30 veggies & track them.
There is a downloadable tracking form. There is also a social media feature but doesn't seem to work very well.
I'm going old school with the form.

I'm pretty much sticking to the form, while recording every week or two on the site. But I'll check I to this thread with each veggie.

Today purple top turnips. Love sautéed turnips yum. When you sautéed it, it has almost the same consistency as potatoes0

Kim, Bless you for posting the Google doc. I couldn't download the doc. Bonkers Kristin will do what you are going to do and post weekly on there. Everything else is here.
Sauteed a pile of spinach with onions this morning and had a veggie scramble. Yum!
I had sent a message to Jen on the the VO site, but will also ask here. Does it have to be one a day or can you knock out several a day. My workday lunches have a minimum of five veggies and that doesn't even count dinner.
Bought some of that funky looking broccoli you shared Kim. Having that tomorrow:)0 -
Did a Brussels Sprout Medley, Sauteed in Garlic Butter, with Purple Onions, fresh Mushrooms, and some Peperoni strips, spiced with Cumin, and Ginger. Served with Cajun Sausage.0 -
Kris, I'm just going to log veggies. Not days. Getting 30 different ones will be the tricky thing.
Today I had spinach in my omelette. And green beans with dinner.0 -
I had Byerly's salad bar. With spinach, romaine, broccoli, peas, carrots, corn and more yummy things.0

Kris, I think the plan is to just log a different veggie each day. Heck, I had three yesterday (salad) but I only logged the spinach. But hey, since the site seems to be a pain in the ***, we can do whatever we want.0

I read that challenge as 30 different veggies in the month, versus just logging a veggie a day. But as with the jaunt or any other challenge, interpret your way- as long as it means you eat more veggies in a wider variety.
Today I'll repeat spinach in breakfast. I'm bringing TJ ( not our TJ the store Trader Joe) Cruciferous crunch with lunch today as my salad. Love it with just olive oil, a touch of lemon juice and salt. It gives me a bunch of veggies - kale, Brussels sprouts, red cabbage, green cabbage. Tonight's dinner has carrots in the soup I made yesterday...which will be served with fresh avocado.
Which will give me 8 different veggies in the first 2 days. Which sounds all great.....
But makes me wonder how will I ever get to 30? I have 10-12 veggies I eat all the time. I try to eat a bit of veggies at every meal. I'll be through my go-to list in the next day or two. Then I'll have to branch out into the unknown.0 -
Sorry Jen, I am going with Kim's approach. Figure it will give me some room since I will probably hit a good 10 veggies in the first few days:) Saw that post about the butter and giggled. Cheese sounds good too!0

Kim, I'm eating at least three veggies a day usually, so just picking one that's different will get me through probably almost three weeks. Then I'll be 'experimenting'. .0 -

Yep I eat different veggies everyday but I'm just going to pick one a day. Today it's kale.
If you guys run out of ideas I recommend going to an Asian store if there is one and Try new veggies.0 -
I tried Kim's earlier share of romanesca (sp???) broccoli. Such a cool looking veggie and it was good. Ate it steamed, nothing else with it. Boring gal here:)0
