Favorite brands of gluten free flours? Candy? Popsickles?

My poor baby niece (4) just found out she is allergic to wheat, dairy, soy, eggs, HFCS, seeds, food dyes, bananas, melons, bees, shellfish.. and a LOT of other things and she's just sad. She reacted to over 90% of what they tested her for today so she's a bit loopy with antihistamines but she apparently asked heartbroken if she was "allergic to flowers, candy, and Popsicles". Munchkin's favourite foods are sushi, PB & Honey, pasta, popsicles, and hot dogs (some of the only meat she'll eat). I think nuts are okay and if the sushi is made well it may be too, but everything else is off the list I think.
My SIL is looking for a few heroes out there and although I've got some awesome gf, df baking recipes to pass along, I don't know of a good dairy free & soy free flour. I'm also wondering if anyone had any recipes, brands, etc. to help make it a bit easier. They live up near Seattle, WA so there are some good options for shopping, just need to know what to get and possibly where to go.

Popsicles should be easy enough since you can get the popsicle molds (or use a ice tray and toothpicks
). The Natural Candy Store has some good finds as well, I looked at them for soy free candy and it takes out the big 8 of allergens, though you will want to read the ingredients to be sure - http://www.naturalcandystore.com/category/8-allergens-free-candy
