Crockpot maple Dijon chicken
1 red and 2 teaspoons
I served with a yellow of cooked quinoa
1 cup Dijon
1/2 cup maple syrup
2 tablespoon apple cider vinegar
1.5 pounds of raw chicken breast
Season chicken with salt and pepper and put in slow cooker.
Combine other ingredients then pour over chicken.
Cook on low 6-8 hours. Serve over brown rice or quinoa

@dkwi04 Do you know the carb count without the quinoa? My husband is diabetic so I need to know that for him to know how much insulin to take.0

Listed as 2 portions - 3chicken strips per serving

Turkey lettuce wraps. So good and so filling. I added a yellow of brown rice mixed with black beans.
If you use just the lettuce leaf, which I did, it is 1red and 1green. Was awesome as leftovers for lunch too!!0 -

@dkwi04 Never ever apologize for the multiple posts! Sharing is great! Alas, the chicken dish has more sugars than we typically allow per entree. Maybe we could substitute sugar free maple syrup. Yes I know that compromises the whole "clean eating" thing that is part and parcel with 21 Day Fix but his diabetic diet is more important than my eating clean. Besides, it's not like I'm not losing weight with all my compromises. I guess I just am not the best example of how to do 21DF.0

I think whatever works for you and your family is great! I so would have done sugar free but I'm trying to be faithful to the clean eating. Actually, I've been trying to steer clear of too much sweet because I've developed a sweet tooth over the last few years that never existed. Im using the 21df to help with that :-)0

@dkwi04 it's rough trying to go sugar free in my house because I'm a professional cake decorator and I have to taste everything I bake lol! Luckily I'm not overly busy during the first round of this diet. I try to take the teeniest bite just to make sure everything is good. Before I used to nosh on cske scraps all day.0

I decorate cakes as a fun hobby at times so I totally get it always trying new recipes mean you are always tasting things. Not easy!0

One Pot Beef and Vegetable Dinner
Serves 5
1 Red and 1 Green each serving
Ingredients:
1 pound'ish of ground protein - I used lean beef
1 cup (green container) of diced fresh tomato
4 cups (green containers) of diced or shredded veggies (I used carrots, asparagus and pepper)
salt and pepper to taste
Brown the protein and drain, add 5 red containers of that back to the pan. then cook that with the veggies - not the tomato yet. I added the southwest spice to this Once that is soft add the tomato and cook down to make a "sauce". I actually added like 1/2-1 cup of water to deglaze the pan and make it more of a sauce.
I served mine over quinoa and my husbands over rice (add a yellow for that)
It was really good and the possiblies are endless!0 -

Everything is 21DF approved (although we diced our own tomatoes and added a little extra broth to make up for the lack of "undrained" canned tomatoes).
Sooooo good. The Gremolata is a must! It adds a little oomph to the flavors. I had mine over quinoa and my husband had his over brown rice. A winner!0 -

I was easily able to divide the parts into the containers so I had 1R, 1G, 1Y. Food exchange says it is: 3R, 1.5G, 1.5Y but I disagree. 24 ozs of beef divided by 6 is 4 ozs per serving and the red container holds between 3-4 ozs, depending on the meat. (Remember, I weighed my food the first week so I would know things like this.) Also, because I used the yellow container to measure my couscous, it wouldn't go over 1Y. However, if you follow the recipe's 1/2 cup brown rice or couscous then you would want to bump up the yellow a bit. But if you don't want to be as fussy as I was being, I honestly think you could just dish out the food over a measured serving of couscous/rice/quinoa and be fine.0

Just made the most delicious, quick and easy dinner.
1 teaspoon coconut oil.
Added a red of browned chicken and a green of frozen snap peas. Cooked that for a few minutes. Defrosted a yellow of quinoa (I make, prepackaged and freeze servings on the weekend of rice, quinoa and black beans). Added some of the southwest seasoning and tossed the quinoa in. Boom. Done. Quick and easy!0 -

Are snap peas "legal" for the green container? I didn't see them on the list and was so bummed, I love them.0

I guess I didn't check on the snap peas lol. Probably not. Good thing that was all I had left. Probably should have counted them as a yellow0

@dkwi04 I'm sure I'll be sharing recipes that aren't quite 100% Fix Approved. I collect a lot of recipes for my husband's diabetes and it's not unusual for me to find something that is on "the cusp" of what we strive for with carbs. I seem to automatically filter recipes and think about how I can modify to fit my dietary needs. I figure the same is going to happen with 21DF. I may find and share a recipe that uses white rice (gasp!) or potatoes (double gasp!) but with the intention that these can be substituted with brown rice/quinoa/couscous (whew!) or sweet potatoes (double whew!). It does become second nature after a while and there are few recipes I can look at and not immediately see what changes I'll want/need to make.0

I never actually thought about looking at the list to see if the snap peas were approved though. I will make sure to substitute that next time. although I totally agree with adapting to lifestyles and such. But for right now I am really trying to focus on following the plan to a T, I will get more relaxed once I am closer to goal. I am not substituting any treats right now and eating exactly what I am allowed - although I have substituted a green for a purple once or twice.0 -
Ah, I'm bummed - was hoping I just missed them on the list or there was another name for them! Wonder why they aren't on there.
