So, my greatest lesson in adding veg was how easy and cheap frozen veggies can be. I am now never without a frozen bag of spinach, kale or collard greens to add to pasta sauce, eggs or soup. And I'm working on the whole "salad in a jar" phenomenon (though I really need to find new jars that don't rust on the top). I hate pre-cut carrots (baby carrots), but live with the Costco veggie tray because some nights I can't cut my own veggies and my kids WOLF them down. But I'd much rather cut my own.

Anyone else have any tips for getting more green into your diet (or your kids diet) without losing the green in your wallet or adding too many unnecessary ingredients?
