What do you sub out and why?

I find myself subbing out a few key ingredients and recently I have been really thinking about why I do that. Is there a real reason or is it just habit?

I don't use butter, I sub country crock calcium plus vitamin d (aka the blue one) <- I use this because it is what my mom switched to when I was first diagnosed. I have no idea why.
