I know that we'll all be focussing on different things with our eating, so what works for one may not work for another... and I know not everyone likes cooking, either... but I thought it might be nice to keep a thread with any favourite recipes or meal ideas/tips.
I've started thinking about what things have high flavour but low calories. I improvised a Thai-style stir fry sauce yesterday, where previously I'd often get one of those packet sauces which are always on offer with noodles and stuff. I used the following (not really measured, just added to taste):
- crushed garlic (1 clove)
- grated ginger (a bit)
- fresh lime juice (half a lime)
- soy sauce (maybe 0.5 tbsp)
- fish sauce (maybe 0.5 tbsp)
- chilli flakes (maybe 0.5 tsp)
= approx. 20 cals and negligible fat, but totally yummy.
(compared to Sainsbury's Thai curry stir fry sauce sachet = 242 cals, 17g fat.)

That sauce sounds totally yummy!
With my eating plan (high fat, low carb, moderate protein), I don't have to worry about the amount of fat in a recipe, more the carb count. So, what in the world can I possibly do when I'm wanting pizza, but can't do the traditional crust? Oh that sounds great! I love cauliflower cheese, can totally imagine that working well. I think that recipe has a bit too much cheese for what I'm currently doing, but I might try it but just make it into smaller rissoles rather than a whole pizza base. I imagine that 'dough', in little sausage shapes with panko crumb and baked would be tasty!!0

dekutree, that sauce sounds delicious! I'l have to try it (maybe lower the soy sauce and fish sauce to decrease the sodium...and add a lil honey??).
tru2one, i've never thought of subbing out the flour since I love carbs too much...but that does look delicious. Perhaps a bit too cheesy for me..but as a treat definitely something to try.
me personally...i love all kinds of food too much to really stick to one diet plan. So other than cutting out a lot of junk (most processed foods), I've just been trying to eat healthy and balanced.
However I have a huge sweet tooth, and so in order to satisfy it, i bake myself breakfast cakes! Someone told me once if I have to have sugar, then try to eat them before lunch. And to keep things healthy, I take a simple cake recipe, sub out half of the flour with oat meal, add yogurt to make it moist (and lowers the amount of oil i need to add), decrease the sugar by half but load it with nuts and fruits...then bake them into tiny loafs so they are portioned out and freeze. And in the morning, just heat them up and eat with fruits...or sometimes I'll heat them with chocolate on top so it melts into the cake.0 -

Last week I baked a rhubarb and polenta cake and it was lovely - http://mixandfold.blogspot.co.uk/2013/05/RhubarbPolentaCake-NigellaLawson.html - I switched butter for marg and used fat free yoghurt, but otherwise just followed the recipe.0
