Favorite Goal-Friendly Recipes?

I've been making a SLEW of good things from scratch to eat for dinner and take with me to work the next day; I've been coming across some amazing low calorie meals. Has anyone else? We should share them!

Here's one I made tonight: Cauliflower Chowder. The recipe uses - get this - real butter and real bacon (?!?!!?!) and a good, hearty serving is still under 300 calories! Let's just say that I substituted olive oil and turkey bacon... The whole pot is less than 1,000 calories. And you could feed a hungry family of 4 on that pot. !!!

    That looks delicious. I know that I will eat cauliflower in a chowder, as I have before without even realizing it! It was the only time I've eaten cauliflower. I'm looking forward to making this for my parents.

    This. was. amazing. I made it for my husband and parents, and they ALL said they liked it better than the original, full calorie, full fat version of fettuccine alfredo! So good.

    Yummy!! Thank goodness alfredo sauce tastes good on anything; 141 calories is a number I can get behind! :smiley:

    My newest came-across-and-loved-it recipe is Butternut Squash Casserole! My own substitutions:
    • Sub butter for Olive Oil
    • Sub cream of chicken soup with a can of garbanzo beans, a handful of frozen vegetables, some yogurt, some chicken broth, and some water, all blended to make my own "creamed soup" (When you use it in a recipe, you can't even tell!)
    • Sub wild rice for Quinoa (SO much better for you!!)

    But the rest of the recipe stays the same. With my substitutions, I got the recipe down to 240 calories a serving, and BOY does it fill you up and keep you there! I've been eating on it all week; DELICIOUS!
