    Just got back from a Yoga Retreat weekend with my daughter. We had a great time and nothing but vegetarian food, so
    delicious. I hope to keep up the momentum this week.

    So I got my new dry suit today!!!!!!!! As I was coming home from the pool this morning the mailman was walking down my walkway. He said he had just dropped a package off for me. I can't wait to wear t tomorrow. I will post a pic of me in it tomorrow or Wednesday. Can't wait to swim in comfort!!!!!!!!

    I made vegan Mac and cheese last night just to try it out. I didn't really expect it to be creamy or cheesy or lower calorie even, but actually it did all three fairly well. The base was potato, carrot, onion, cashews, I added brewers yeast and almond milk and then hatch chilies at the end but they aren't required either. I'll probably make it again, because it hit the mouth feel craving aspect and was 380 calories for a portion which would have been more than double that with traditional ingredients.
    I almost never have pasta anymore and I certainly don't make traditional Mac and cheese so this was a great find.

    Well now I want mac and cheese. I've been craving grilled cheese sandwiches as well. . . Lol!!

    Eninad-I haven't had hardly any pasta, I did find recently find that the Bob Evans macaroni and cheese is good and the calories for 1 cup is 330 calories, I ate 1/2 cup for 165 calories. Thats probably the first time I had mac and cheese for over 1 3/4 years. I have made pasta salad some, thats pretty high also in calories. Janice

    Man....... You guys kill me :'( I would love to try some of your recipes but half the ingredients I am allergic to :'( they sound delicious but dairy, almonds and I just don't get along. Milk is the only dairy I can handle. I discovered the hard way I am allergic to the cultures in the rest. Which means no salmon dip and that sucks big time.

    We have a new member that just joined us tonight. It is my daughter's best friend. She is my "other" daughter. She is in need of encouragement and support. I invited her to join us. Her name is Karri. I told her that although this challenge is almost over she can still get the support of some wonderful people.

    Esther: On the Mac and Cheese, you don't need any almond milk in it. Are you allergic to cashews?

    I can eat all other nuts but almonds. Including peanuts. I can drink milk but cheese and all other dairy and yes yogurt is included makes me really sick.

    You can try the vegan mac and cheese then, it's cashews, no almond milk required, no other dairy no actual cheese, no yogurt. It''s vegan.
