Asian Lettuce wraps--
1 lb ground turkey
1 Tbsp chopped ginger
2 chopped garlic cloves
1/2 cup shredded carrots
Romain or bib lettuce leaves
Liquid aminos, tamari, or soy sauce to taste.
Brown turkey add all ingredients and simmer for 5 minutes. Place mixture in lettuce leaves and roll up like taco to eat. You can double or triple this recipe and keep in the fridge to have for a quick lunch.

Mexican lettuce wraps-
1 lb ground turkey or
shredded or ground rotisserie chicken
Taco seasoning packet or
Homemade taco seasoning:
1 tbsp chili powder
1/4 tsp garlic powder or chopped garlic clove
1/4 tsp onion powder
1/4 tsp crushed red pepper or cayenne pepper
1/4 tsp dried oregano
1/2 tsp paprika
1 1/2 tsp cumin
1 tsp salt
1 tsp black pepper
1 cup of frozen or chopped onions and peppers
Salsa to taste
Chopped Avacado
Sliced Green Scallions
Romain or Bib lettuce or collard greens for "taco shells"
Brown turkey or chicken or add shredded rotisserie chicken to pan, then add chopped pepper onion mixture. Cooked 5-10 mins, or until onions are transluscent. Add 1/4 cup of water and taco seasoning or homemade seasoning mix. Cover and simmer until water cooks down, around 10 minutes. Wrap mixture in greens like a taco and top with salsa and diced avocado.

Breakfast Poached Egg Salad-
2 Large Eggs
Small bunch spinach leaves
Chopped Green Pepper Slices
Sliced Scallions
Shredded Carrots
Make salad with listed ingredients or add your own choice or veggies. Place poached eggs on top and add hot sauce as "dressing". Enjoy! My favorite breakfast!0 -
Healthy Dill Chicken Salad-
2 Chicken Breast or Large packet of Tuna for Tuna Salad Version
8 Chopped Green Scallions
1/4 Cup Shredded Carrots
1 large Avocado
4-6 Tbsp Dill Seasoning
Salt and Pepper to taste.
Boil Chicken breast 30 mins or until cooked through. Let cool, then shred with a fork. Mash avocado, add to shredded chicken with all other ingredients and seasoning. Place in lettuce wraps or atop ezekial bread.
