Gluten free pancakes

I know there are GF mixes in the supermarket today and they are pretty good but I have been making my own pancakes and I actually love them and they are much more nutritional than the mixes. I use 1 cup of GF oats, 1 egg, 1 container of Greek yogurt plain or vanilla, and about 1/2 cup low fat milk or as much as you like to make the consistency you prefer. I sometime add a little flax meal to this to bump up the fiber too. This will make about 8 pancakes. I top this with sliced strawberries and use very little syrup. They almost have a creamy taste and I just love them.

    Sounds yummy, but pancakes are not pancakes to me unless they are fluffy, so I don't even bother - I make baked waffles instead from a mix about 6 times a year. Not my favorite foods anyhow, just a different vehicle for greek yogourt and fresh fruit topping, lol.

    I will give this a try. Thanks for posting. I miss pancakes. The ones I've tried taste like dirt. My daughter saw a post on Instagram that there's a brand at Food Lion (forgot the name) that is wonderful. I have it on the shopping list as well.

    Pamela's GF baking mix is a good one that I use for my waffles. It is an all purpose sort of mix that is good for lots of different things.
