How to Make Water Kefir

Water Kefir is a good tasting fruity carbonated beverage. The kefir grains are live cultures that grow and produce the carbon dioxide that gives the drink its sparkling taste.

How to make water kefir:

Buy water kefir grains.
Put in large jar as per their instructions. I used brown sugar and molasses, as per the instructions that came with my grains. These two sugars have minerals in them for the bacteria. They say also to use mineral water, not distilled water.

Set at 68-72°F for 2-3 days. This is the first fermentation.

To flavor your water Kefir:

Strain out water kefir grains and pour into clean/empty Kombucha bottles. Only fill to 60-75% full. top off with 100% natural fruit juice, sweetened with sugar (not artificial sweeteners).

Cap bottle tightly.

Let set on counter top for a couple days. The longer you ferment, the less sugar. If you go long enough, there will be no carbs, but it will taste very "dry".

Put in fridge.

Drink and enjoy!

Re-fill your large jar as per the original instructions.

Be careful, because if you don't use the right bottles, they could explode!

Makes a really nice low carb sparkling drink.
