Cauliflower, Mozzarella and Ham Casserole

Ingredients
1 large head cauliflower (fresh tastes better than frozen).
4 oz. cream cheese (full fat)
1/2 cup sour cream (full fat)
1/4 cup Parmesan cheese
1 small package of diced ham (I used Smithfield's and it was 8 oz.) avoid "honey cured".
1 cup shredded cheddar cheese
1/2 teaspoon garlic powder (optional)

Instructions
1.Remove stem/core from cauliflower, and chop into small pieces.
2.Bring medium pot of salted water to a boil. Add cauliflower and cook for 15 minutes (10 if you like firmer cauliflower).
3.Preheat oven to 350F
4.In a large mixing bowl add cream cheese, sour cream, parmesan cheese, ham and garlic powder.
5.Drain cauliflower trying to remove as much water as possible. Add to other ingredients. Salt and pepper to taste (optional).
6.Use electric mixer to beat out any large clumps of cauliflower (unless you like it chunky, then you can mash by hand with a potato masher).
7.Pour mixture into an 8x8 casserole dish, glass is best.
8.Top with mozzarella cheese. Bake 20 minutes.

The best part about this recipe is it is totally customizable. You can add all sorts of things to suit your likes. My husband actually complained that I hadn't made this before going low carb! :smile:

So nutrition info: Serving size is 1 cup (unless you're my husband then it's half the casserole dish). Keep in mind, actual numbers may vary depending on the brands you are using. Check labels to check carb counts.

    I will make this. My family eats lots of cauliflower. But one kid doesn't eat ham, so maybe I can find a replacement meat..... or she can eat peanut butter!
