Keto Tuna Salad Sandwich Deluxe!

OK, when I get in the mood for tuna salad, I usually want it RIGHT NOW! So, what I do is keep a few cans in the fridge so that when I mix it all up, it is nice and cold - just like I like it!

2 cold cans of tuna
2 hard boiled eggs
Mayo - as much as you choose. I would use about 6 TBS for this.
3 TBS chopped pickles - not sweet relish.
Salt and Pepper to taste

Smash it all into a big bowl and get it well mixed.

Now here is the "Deluxe" part.......

Put a piece of parchment paper in your microwave. Place 2 pieces of American cheese on the paper, but not touching each other. Microwave for 1 minute. Let it cool for 30 seconds, maybe a minute, and the cheese will get crispy. That is your "bread" for the sandwich!

    Oh I like this recipe...we are doing meatless Fridays for Lent and regular tuna can become boring all the time. One trick I did learn online about tuna salad...make sure you squeeze out all the water! (It's a Subway "secret") :)

    I am having it today. And definitely squeeze the water out. One of these days I may try tuna packed in oil.

    YUM! I am gonna make this for lunch today :) can I ask ... when you say American Cheese is that just plain yellow cheddar?
