Keto Pancrepes

I originally saw this recipe online as "Cream Cheese Pancakes". The original recipe called for vanilla, cinnamon and stevia and/or splenda. After making it once I had a few thoughts: A: they have the consistency of something between a pancake and a crepe (hence the name pancrepes) and B: they were sweet enough with sugar free maple syrup so I now omit the vanilla, cinnamon and stevia.

Ingredients:
2 eggs
2 oz. cream cheese (I use Philadephia)
1/4 tsp. baking powder (I use Clabber Girl)
1 tbsp. butter (optional) (I use Kerrygold)

Add all ingredients and blend them together. For me, it's much easier than mixing by hand. Cook 'em like regular pancakes.

This recipe makes 3 good size pancrepes. I top mine with Maple Grove Farms Sugar Free Maple Syrup which has 1 net carb per serving.

So for all 3 pancrepes:
Calories 440
Fat 39g
Cholesterol 530mg
Sodium 470
Carb 4g
All numbers are dependent on brand of ingredients used.

    So, sugar free maple syrup is low in carbs? Now I need to get some!

    Yes, if you count net carbs. It's 6g of carbs minus 5g of sugar alcohols. :smile:

    I add 2Tbs of almond flour to the basic recipe and omit the cinnamon and stevia. They are more doughy, almost like regular pancakes. Yum!

    It depends on the brand of the syrup and how much sugar alcohol the "sugar-free maple syrup" contains. Some sugar free maple syrups (or pancake syrup for that matter) can still be quite high in carbs. I actually prefer to make my own sugar-free low carb maple syrup at home. I freeze it in 2 tablespoon portions which makes it easy to take out and use that way.

    I've been making these without the baking powder. I'll have to try adding it in and see how much of a difference that makes.
