A "Bread-Less" Reuben.

My all time favorite sandwich is a Reuben. Sadly, of course, the bread is now out of the mix.
So basically I make it without bread, but other than that, exactly the same way.
1. I make my own dressing. Mayo, Reduced sugar ketchup, and chopped dill pickles. I use about a 4 to 1 mayo - ketchup mix. I make plenty and store it in the fridge.
2. About 1 cup of sauerkraut goes in a pan. Squeeze out most of the water first.
3. About 6 ounces of corned beef or pastrami.... or could even be turkey.... into the same pan.
4. 2 - 3 slices of Swiss cheese in the same pan
Now put a lid on it and cook only until the cheese is melty, not melted away. Remove from pan, put it on a plate, and stir in some of the dressing.
