Thai Pumkin (or Squash) Seafood Stew

So I made this last night and had some for dinner....OH YUM!! Made a couple of tweaks though:

(1) I used coconut cream instead of coconut milk to up the fat content a bit more;
(2) I used 1 tablespoon of garlic infused olive oil instead of actual garlic so I still got the flavor of the garlic, just not the carbs from the garlic;
(3) I used Kabocha Squash instead of pumpkin and used a little less than 2 pounds which also helped bring the carbs down a bit; and
(4) I used a different mix of fish / seafood than what his recipe calls for - I also reduced the amount of the seafood by 1/2 because his recipe was so high in protein.

All of these changes together = 1 serving has 8.8 total carbs. It was delicious!! Enjoy!
