Hi! I made meatloaf tonight for dinner. I sustituted cream for milk, almond flour for oatmeal, and low carb marinara for ketchup. It was tasty but it fell apart, lol. Do you have suggestions for improvement or will you share a keto meatloaf recipe you love?
Here's my original recipe:
1 lb ground beef
1/3 lb ground pork
1 egg
1/4 cup milk
1/2 onion finely chopped
2 celery stalks finely sliced
3 Tablespoon ketchup
1 teaspoon soy sauce
1 Tablespoon olive oil
1 teaspoon salt
1 teaspoon pepper
2 teaspoons onion powder
1 teaspoon celery salt
1/4 cup oatmeal uncooked

Try adding a little bit of either guar gum or xanthan gum next time. They both act as binders and help hold things together or help keep things suspended if in a liquid so they don't separate. Start with less - you can always add more. I'd start with 1/4 teaspoon - 1/2 teaspoon. Too much and they can kind of get a little slimy in their texture. Also just try googling "low carb high fat meatloaf recipe" and several should come right up.0

I did a search on pintrest. There were a lot! I'm hoping someone has found a "really good" recipe and can point me in the right direction. (I found fathead pizza this way and was so glad for the advice!)0

I have used almond flour instead of bread crumbs as a binder.... worked out ok.1

This is my hubby's favourite, but it isn't quite on the mark for me.
(If this doesnt work, type "Dana Carpender Not Your Mamas Meatloaf" into google - she previews it from her cookbook. BTW - our absolute favourite keto cookbook, worth buying!)

I prelog my meals - this is on the menu for Friday. I LOVE the philly cheesesteak peppers from the same site, so I have high hopes:

@110challenge Thanks for the suggestion. Looks good, yum. You introduced me to a new recipe site too, yay . Those Philly cheesesteak meatloafs looks amazing. What a cool idea!
Pre-logging is a great practice. I need to do it more often.0 -
Just so you know, LOL, Philly cheeseteaks NEVER have green bell peppers. I am from Philly and eaten at least 500 in my life...... I see so many recipes that show green bell peppers that say "Philly Cheesesteak".... nope, not gonna happen in Philly.0

Lol, gotcha. I've heard a similar argument here in the southwest i.e. real chile verde is just green chiles and pork WITHOUT tomatillos0
