    To help with some healthy fare and great things for cookout, if any one is interested in the recipes I have two that are light and good for you:
    Watermelon salad (just did this one over the weekend and so far the taste testers are saying Yum!) and Cucmber salsa (got such a resounding Yum! from the taste testers that I had to make two batches of it just to get everybody that wanted some!

    I'm at work now and I don't have the recipes with me, but if anybody is interested, I'll post them tonight when I get home after dance class so there is time for those that want to make it to have time to get the ingredients, just let me know!

    Here's the Cucumber Salsa... and remember: only 16 calories per 1/4 cup serving!!!!
    Cucumber Salsa
    2 cups finely chopped, seeded cucumber
    ½ cup finely chopped seeded tomato
    ¼ cup chopped red onion
    2 tbs minced fresh parsley
    1 jalapeno pepper seeded and chopped
    4 ½ tsp minced fresh cilantro
    1 garlic clove minced or pressed
    ¼ cup reduced fat sour cream
    2 ½ tsp lemon juice
    2 ½ tsp lime juice
    ¼ tsp ground cumin
    ¼ tsp seasoned salt
    Combine first 7 ingredients in a bowl. In a separate bowl combine remaining ingredients and pour over cucumber mix then toss gently to coat

    And the Watermelon Salad:
    Watermelon Salad

    1/2 large chilled seedless watermelon, chopped into 1" cubes
    1 small red onion, sliced
    1 c thinly sliced basil leaves
    1 c chopped cilantro
    1/2 c minced mint leaves
    2 limes, juiced
    1 (4oz) package crumbled reduced fat feta cheese
    3 T olive oil
    2 T Balsamic vinegar (more or less to taste)
    Salt and Pepper to taste

    Gently toss all ingredients in a large bowl.
