Hi~ I'm looking for low calorie recipes that I can cook for my daughter & her husband while I am here with them and the baby. Please share if you have some-

    Maybe stick to the KISS method?! Half a plate of veggies or salad... lean meats and fish.. with some rice, potatoes, pasta as a side.. you can jazz anything up with a little herbs and spice :)

    My go to:
    -2-3 chicken breasts (trimmed) (raw)
    -fresh green beans
    -cauliflower florets (or potatoes if you aren't watching your carbs)

    I lay down the chicken in a casserole/baking dish and then out the cauliflower on one side and the green beans on the other. I take a packet of Italian dressing seasoning and sprinkle it over all of it. Usually I sprinkle some garlic powder and seasoned salt as well.

    Cover with foil and bake at 350 F for an hour or until everything is cooked - maybe a little longer.

    Take ground lean turkey breast and a low sodium pasta sauce and make you a meat sauce. From there pour over some spaghetti squash or zoodles (I think this is what they are called). I have never used the zoodles but it is great with the spaghetti squash.

    We no longer buy any white/yellow potatoes. We use sweet potatoes baked and in soups/stews, we use unpeeled radishes. Don't laugh, they truly taste "almost" like potatoes once cooked! We even eat them as a side dish We use only brown rice and rarely. Otherwise, we like tilapia with lemon pepper or chili powder. Simple and so tasty. Asparagus or mixed green salad with shredded carrots, spring onions, etc. We don't use croutons or eggs in our salads unless it is a salad meal.
