It's in the oven for tomorrow's breakfast. I didn't have any honey, so I used maple syrup, and then I substituted granular erythritol for the sugar and full fat Greek yogurt for the low fat. Just full disclosure. I changed the number of servings from 12 to 9 so I can cut fatter slices, but then we'll eat it with butter and scrambled eggs.

In the morning I'll take a picture and tell you how it tasted. My immediate feeling is that I love the way these recipes upload straight into the diary, and I love that they're listed in both cups and spoons and metric weights, because as a professional I do everything with a scale.

    I'm making these in the morning. I cut up some peaches that I got from a roadside stand, so mine will hopefully be just like the pictures. Again, recipe seems super easy. I plan on having bacon with them.

    Today I made the buckwheat banana pancakes with the blackberry compote. I am loving these recipes popping up in our news feed here! I especially find myself wanting to try all the breakfasts, because I can prep everything the night before. I set the timer on my coffee pot and then I can wake up and drink coffee while I cook pancakes.

    I was nervous about the 100% buckwheat flour because the author said it could be heavy. In the end, I loved it. They almost look like chocolate, but they just tasted like whole grain. Is nice because buckwheat is gluten-free and has a lot of fiber. I'm filling my freezer with ziploc bags of pancakes for days when I don't feel like cooking, also.2ktstz9y72vd.jpeg

    I have never cared for buckwheat pancakes but my family loves them. How did the strawberry bread turn out?

    It was really yummy! I will definitely make again because there's a guy who sells local strawberries by the highway all summer.

    Strawberries freeze very well, also. I have tried growing them without success, but grab them up when they are on sale and buy bags of whole frozen ones the rest of the year.

    Spaghetti squash hash browns did not look like the picture. In retrospect I probably should have clicked the link and read their recipe. I just made it up as I went based on a picture that was in our newsfeed.

    This is my version of Ratatouille and veggies can be swapped out as your pantry dictates. Just be careful about the amount of yellow squash or other veggies that convert to sugar more quickly than the greens. I sometimes use red onions rather than yellow. This is one of my hubby's favorite vegetable dishes and mine as well. I do not add any water as these veggies are water-rich, but you may wish to add a small amount before sticking it in the oven. I cook it to just softer than al-dente, so you can adjust for personal taste.

    I modified the recipe - used only 1/4 cup maple syrup, used half cacao powder half chocolate protein. Was not as sweet as some would like, but I really enjoyed these. Will play around a little more with the recipe, though.
