Hey - bought pre-spiralizer zoodles from Whole Foods. Have never eaten them or made them so curious if anyone eats these, how do you prepare them? Going to make this as a side dish to salmon tonight.

HEY HEY HEY! Yup. I've made them. I just spiralize them and toss them with whatever sauce I'm making. That way the sauce steams them enough for my tastes. If I'm not really saucing them, I do a quick blanch to soften.

    Enjoy!

How are proteins sitting now? Getting better or still a struggle?

For the most part I am better with protein but the other day I had a low fat meatloaf that was too dry and I got a case of "the slimes" - was at work and probably the worst time I had getting sick.

Mainly ok though - had 1/2 of a burger last night and tonight is salmon

I found a ton of zoodle recipes on Pinterest. My favorites so far have been: creamy lemon ricotta zoodles, Asian zoodles, and pesto zoodles. The Asian and Pesto are so simple. For the Asian I spiralized the zucchini and threw them in a skillet with sesame oil. I added fresh garlic, honey, and soy sauce, I added some stir fry veggies and it was delicious. For the pesto, I literally sautéed them in the skillet with 2 tablespoons of pesto that I bought at Costco. I have made the pesto and added chicken to it as well.

@corncob35 - thanks for the input! How did you get your zoodles good texturally? We launched them but they were mushy - I don't want crunchy ones but also not mush...
