I was diagnosed when I was thirteen. Back then you didn't hear much about gluten free, even some doctors had never heard of celiac disease. My meals consisted of a lot of rice, salads, rice noodles. And if you did find something gluten free at health food store or a co-op, they'd taste like cardboard. Or making your own just didn't taste like the actual, "normal" food.
Now, you can pretty much make anything you see made with regular flour, & with gluten free flour instead. More big name food companies are coming out with gluten free food it seems like every week something is new at the grocery store that is also gluten free. I'm an OG when it comes to celiac disease! Hahahaha!
