Healthy Packed Lunch

I make Jar soups ALL the time.
This recipe I found here
* Grilled Chicken strips from Costco
* raw peppers
* raw shallots (long onions with white bottom and green tops?)
* Chinese vermicelli noodles (I get these at grocery store in "international" section)
* herbs from my garden (parsley, cilantro)
* chopped garlic
* carrot slivers raw
* 1 tsp BOVRIL chicken (costco sells huge bottles)
* Splash of Hot Sauce
I put the noodles in first and then the chicken and everything else. I fill the Mason Jar on my scale so I can weigh everything.
Often I prepare all 5 jars for my week. Then it is grab and go!
When it is lunch time, boil water (we have a kettle in the office kitchen) and pour into the Mason jar when it is ready. Seal with the lid, and take to the table, shaking (gently) over a period of like 3-5 minutes or until it is obvious the noodles are soft.
Pour it into a bowl and enjoy!
I LOVE the soups above - and make it as much as I can.
You could substitute the chicken with beef strips if you cook them and beef bovril if you prefer.
Sometime I use left over rice instead of vermicelli and I have also put left over vegetables from dinner in there too.
If you like Al Dente veggies - then you may really like the above!!
